Recipe: Vegan Pesto

Vegan Pesto

1/2 c. fresh basil
1 1/2 c. fresh baby spinach
1/4 c. pine nuts
3 cloves garlic
1 Tbsp. lemon juice
1/2 tsp. sea salt
1/4 c. olive oil

In a food processor, combine the basil, spinach, pine nuts, garlic, lemon juice, and sea salt. Process until all ingredients are well chopped (about 2 minutes). Drizzle the olive oil into the food processor and process for an additional minute.

Serve over your favorite pasta, or my new favorite, spaghetti squash!
